At SUNY Delhi, students in the culinary arts program are always making delicious dishes and courses using locally grown ingredients from the fertile farms of New York. In 2023, a project allowed them to truly work from farm to table to provide new flavors for impassioned foodies.
The Delhi culinary arts program collaborated with local farms and community partners to develop an original tomato sauce recipe from locally grown tomatoes, basil, and garlic, resulting in over 9,000 lbs. of sauce. The sauce was then delivered to eleven K-12 schools across the region to enjoy in their school lunches throughout the year, making their noodles, sandwiches, and pizza more flavorful. The students loved the flavors of the locally-made sauce.
Best of all, Delhi’s sauce is healthier than commercially produced alternatives. A win for both sides!
